Sollasa Fino

Eminently smashable. This is the perfect digestif for those that like a slightly sweet, frothy, finish to their meal with the cardamom pod bringing that oh so necessary medicinal excuse to their choice of drink.

INGREDIENTS

• 50ml Sollasa
• 25ml Fino sherry
• 25ml Lemon juice
• 15ml Agave nectar
• 15ml Fresh pineapple juice
• Green cardamom pod (popped) for garnish

METHOD

Add all the ingredients and ice to a cocktail shaker and shake for 10 seconds.
Strain the mixture into a sherry or wine goblet.
Garnish with a green cardamom pod (popped)

Accompaniment: The ideal accompaniment to a fresh dish that plays with flavours of the sea. Fish dishes from the South, or those indulgent shellfish dishes that leave you licking your fingers.
